How to Build a Thriving Pizzeria Business

Today I would like to share my experience of running a pizzeria.

People often ask me: “Teacher, how do I build a successful pizzeria business?”

This is a fairly complex question. Apart from external factors such as store‑site selection, interior‑design style, hygiene standards and friendly customer service, the core lies in internal factors: pizza quality and production output speed.

For example, you may have picked an excellent location with nice decoration and good sanitation, yet the pizza quality is poor. In that case, diners will not come back a second time. Bear in mind that a business without returning customers can hardly survive in the long run.

On the other hand, the pizza quality may be acceptable, but if it takes far too long to get the order ready, you will inevitably lose customers due to slow service.

Therefore, when running a pizzeria, both the flavour of the food and the speed of production directly determine whether the shop will do well.

So how can we successfully manage a pizzeria?

Here I would like to share some of my personal experiences:

“A workman must first sharpen his tools if he is to do his work well.”

This means that besides external elements including location, decoration and cleanliness, you also need to equip your kitchen with dedicated pizza‑making machinery.

For instance, if you want your pizza‑base dough to be springy and chewy, it is better to use a pizza‑specific dough mixer for kneading. The mixing speed of this specialised machine is engineered around how gluten develops. It effectively protects wheat‑flour fibres from damage during the mixing process. Without this springiness and chewiness, the quality of your pizza bases will suffer.

Furthermore, the ideal pizza texture – crispy on the outside and soft on the inside – is achieved through the temperature and performance of your oven. The inner walls of professional high‑temperature pizza ovens are specially built with volcanic stone slabs. They combine electric thermal radiation with the functionality of a traditional wood‑fired kiln and deliver outstanding heat performance. A pizza can be fully baked within 60‑90 seconds. Its performance is fundamentally different from that of an ordinary bakery oven.

When it comes to forming pizza bases, you have several options: hand‑pressing, tossing‑and‑stretching, or mechanical roller pressing. For commercial operations, production speed must be prioritised so you can serve customers promptly and prevent them from leaving after a long wait. That is why a dedicated pizza dough‑roller machine is the better choice. It saves time and labour, cutting down labour costs. Pure hand‑shaping or dough‑tossing is suitable only for home‑style workshops or live demonstration shows; such performance‑style tossing is not practical for day‑to‑day business operations.

In my opinion, to run a pizzeria smoothly, it is essential to invest in proper pizza‑making specialised equipment.

As another old Chinese idiom goes: “Even a clever housewife cannot cook a meal without rice.” Literally, no matter how skilful a wife is, she cannot prepare a meal if there is no rice. Figuratively, without essential supplies and conditions, even capable people cannot get things done.
